Veganuary – Top Plant-Based Ideas for January and beyond!

January is here and so is Veganuary! It’s the month where we get adventurous with our plant-based ingredients and cook more planet friendly meals.

Whether you’re giving it a go for health reasons or want to avoid meat after the festivities of December, Veganuary is a fantastic opportunity to introduce more fruit and vegetables into your diet while having fun in the kitchen!

Here are our top tips:

1. Rainbow Dishes
Bring color into every dish you prepare; people eat with their eyes and your vegan masterpiece deserves to look as good as it tastes! Think vibrant yellow or orange peppers, butternut, deep red onions, the purple hues of beetroot and even Broccoli! Roast them up and add to your everyday dishes or serve on the side. Try lining your tin with baking paper for minimum cleaning afterwards.

2. Protein Power
With meat off the table, it’s important to get protein into your recipes. Lentils, rice, oats, seeds and even peas are an easy way to bulk out your meals and feel fuller for longer. Overnight oats are a delicious way to start the day. Mix oats with your plant-based milk and cover with wrap, come morning get creative with your toppings!

3. Get Your Bake On
Your favourite recipe can go plant-based! Try replacing dairy butter with a nut butter such as hazelnut, peanut or almond and instead of eggs use coconut cream or hazelnut milk for a light and moist cake.

4. Go Global!

5. Love Your Vegetables
With all the fresh fruit and vegetables you’re cooking, storing your ingredients the right way will help them last longer and keep their nutrition. Covering them with plastic wrap will stop them from absorbing any other flavours in your fridge, too.
